The story begins with the original Daiquiri, which is traditionally traced back to 1898 and an American mining engineer named Jennings Cox. In the Cuban mining town of Daiquiri, Cox is said to have mixed local rum with fresh lime juice and sugar to create a refreshing drink for his guests. Eventually, the cocktail made its way to Havana's bar scene where it would become one of Cuba's most celebrated contributions to mixology.

The history of the Daiquiri is closely associated with Constantino Ribalaigua Vert, the legendary bartender at El Floridita in Havana. He helped popularize frozen versions of the drink in the early twentieth century using ice and blending techniques to create a smoother, colder interpretation of the original. This opened the door to countless fruit variations, with strawberries becoming one of the most popular additions. Sadly, the Strawberry Daiquiri's popularity came with its problems.

In the 1980s, as frozen cocktails became increasingly popular, fresh fruit and balanced recipes were often sacrificed in favor of brightly colored syrups, artificial flavorings and overly sweet premixes. The result was a drink that looked good but too often lost the freshness and character that a good Daiquiri should have. The answer is simple: go back to the original ingredients. All you need are ripe strawberries, good quality white rum, fresh lime juice and just enough sugar to balance the acidity.

The strawberries provide natural sweetness and vibrant flavor, while the rum and lime maintain the structure of the original cocktail. When made properly, the Strawberry Daiquiri is more than a frozen holiday drink. It is a refreshing expression of fruit, rum and the enduring versatility of a Cuban classic.

Recipe:

60ml White rum

30ml Freshly squeezed lime juice

20ml Simple syrup

4-5 Fresh ripe strawberries

Method:

1. Place the rum, fresh lime juice, simple syrup and strawberries into a blender.

2. Add the crushed and blend on high for approximately 15-20 seconds until smooth and velvety.

3. Pour into chilled cocktail glass.

4. Garnish with fresh strawberry and lime wheel.
