History:
The Paloma is a refreshing tequila-based cocktail that is popular in Mexico and has gained popularity around the world. The origins of the Paloma are a bit unclear, but it is believed to have been created in the mid-20th century. While the exact history of the Paloma maybe elusive, there are different theories on the origins this cocktail.
First theory is, the name “Paloma” is Spanish for “dove” and some believe the cocktail was named after popular folk song “La Paloma”, which was first composed in the 19th century. The Paloma is often served over ice in a salt-rimmed glass, and it is known for its bright, citrusy flavor profile. Another suggests that the Paloma was created in the 1950s by legendary Mexican bartender Don Javier Delgado Corona at the La Capilla bar in Tequila, Mexico.
According to this tale, Don Javier reportedly concocted the Paloma as an alternative to the Margarita, using grapefruit soda as a key ingredient due to the scarcity of fresh limes at the time. Regardless of its exact origins, the Paloma has definitely cemented its status as a classic Mexican cocktail, celebrated for its tangy citrus notes and smooth tequila base.
